I’m always finding new ways to cook pork chops. In the winter I like to seared them in a pan, other times I like to fry them. In the summer we usually grill them, which is my favorite way. I was looking through one of my cooking books and I came across this recipe for Smothered Pork Chops.
I reviewed the recipe and it sounded easy enough. The best part of the recipe is the onions. I love onions and garlic and the more you add the better.
Craving chocolate, and must satisfy the craving, that’s what I believe. Brownies are really simple to make and you can be really creative with it. I decided to make this great recipe in found in one of my cooking books, Favorite Brand Name Bake Sale Cookbook. These Rocky Road Brownie Squares are just the perfect treat when craving something chocolaty.
Rocky Road is the ice cream I usually buy and having all of the toppings on a brownie, it’s just perfect.
Pasta is something I can pretty much eat everyday. I try using low-carb pasta in some of my pasta dishes, but there are times when I just want to enjoy great pasta and not worry about the carbs. My husband had gone out to the market and found these fresh shrimps already peeled and deveined.
At first I was going to grilled them, but at the last minute I decided to pan seared them. I made this Pan Seared Shrimps Over Spaghetti Pasta, and even though the dish is really simple everyone was happy. This is a perfect meal that comes together in just a few minutes.
I can’t recall the last time I ate Bacalaitos (Cod Fish Fritters). On Sunday I decided to get in my kitchen and make some. I had talked about making them for months but never did. My husband kept telling me, just get in the kitchen and make them already.
I had purchased some bacalao (Dry Cod Fish) to eat with boiled bananas, something my brother and I enjoy very much. My brother was in town visiting and I thought it would be good to make it for us since my husband doesn’t really care for boiled bananas.
1. I had to take a week off from posting this week as I was really busy. I’m addicted to my food blog and when I skip posting any recipes, I feel sad. I had so many things going on this week, that I decided it was best to just take it easy and focus on what I needed to do. But nothing to worry, I’m back on Monday with great recipes for you guys to do this spring, stay tuned!!

1. I had another busy week. Appointments for me and my little boys Cayman and Cayco. Cayman had an appointment to have his teeth cleaned and remove a little mass he had on the side of his neck. They don’t think is anything to worry about, but it was sent to the lab just to make sure. Otherwise, he is a healthy little boy. Cayco had some shots too and he weighs 5.2 pounds. My baby is no longer a baby, he is getting big fast. I love my babies, they keep me sane.
2. I started my spring cleaning. I finally changed my curtains and duvet. Everything is white right now. I couldn’t wait anymore. The dark curtains and duvet was driving me crazy. I’m ready for Spring. In about a couple of days my daffodils and tulips will bloom, I can already see the flower.
I was looking for a drink that included mango rum and coconut rum. I came across this recipe and even though the name of the cocktail is a little funny, Alien Sludge, I looked at the ingredients and I was sold. To my surprise the drink is actually really, really good.
The mango rum and coconut rum really come through. The drink is sweet and lovely, perfect for the ladies. The color of the drink is beautiful, in it’s own way, very sophisticated and playful.
1 ounce curacao blue
1/2 ounce coconut rum
1/2 ounce mango rum
1 once cream of coconut
1 ounce orange juice
2 ounces pineapple juice
Mix all ingredients well, pour over ice.
Coconut is one of those things I grew up eating right from the shell. When I was a kid I lived in a farm in Puerto Rico for about 8 years. My dad had coconut trees, banana trees, orange trees, you name it my dad had it. We even had a couple of cows walking around. I remember the coconut trees were really tall and my dad would climb the tree and knock the coconuts down. Those were some fun times.
These Coconut Cupcakes are the perfect dessert for any occasion. I decided to add some green food coloring to celebrate St. Patrick’s day which is only a few days away.
We had such a beautiful weekend. The temperatures were in the low 70’s, which is perfect for this time of year. I decided to make a Cold Pasta Salad for dinner. Cold pasta salads are always great for the Spring and Summer as a side dish for your grilled meats.
The best thing about cold pasta salads is that you can pretty much add anything you like. I added feta cheese, black olives, small pepperoni, cherry tomatoes, onions, red and green peppers and for my pasta I used bow tie. I then made a really nice dressing, that was not only delicious but took just a few minutes to make.
