I love all kinds of vegetables, either grilled or baked. This mix of veggies are really easy to make, the only other ingredient is Italian dressing. Italian dressing can be used to marinade not only veggies, but meats.
1. It’s a gorgeous day out today, perfect for grilling and hanging out by the pool. Except the pool is not warm enough. Any plans for the weekend? Well, I’m planning my birthday party for next Saturday at my house. Last minute party but it should be full of fun, great food and drinks and music. I can’t wait!
2. Had a great week and I was able to make some great dishes. Not only were the dishes delicious but somewhat healthy. I started the week with Oven Baked Meatballs. These meatballs were cook slowly in the oven and were so tender and delicious. I also made the marinara sauce, which came out great as always.
I was craving chicken parmesan and since I’m trying to eat healthy I decided to make some changes. I made a Baked Mozzarella Chicken in a marinara sauce, similar to a chicken parmesan without the breading and low fat cheese. It was delicious.
I finished the week with a Mango Margarita that was fantastic. It was made with fresh mango and mango juice. It was great for a Friday.
Starting my Friday with a fantastic drink to get me ready for the weekend. I made this Mango Margarita that is out of this world. Mangoes are one of my favorite fruits, so this drink is perfect for me.
The drink is not really strong, but you can add a little more liqueur if you like. I find that I enjoy my drinks when they are not too strong, so this is just perfect. This is a fantastic drink if you are having company over. I’m sure they will really enjoy it too.
For the last couple of weeks I have been trying to eat a little healthier. Eating healthier does not mean I will deprive myself of some of my favorite dishes. This dish is a healthier version of a Chicken Parmesan. I made a couple of changes to the recipe, but that didn’t take away the flavor.
The chicken turned out really delicious, and I didn’t miss the breading or the extra fat on the cheese. You can always make small changes to a dish without sacrificing taste.
On Easter weekend I decided to make Grilled Beef Kabobs. I didn’t want to make the big traditional dinner instead something easy and quick. These kabobs are great as an appetizer or main course.
They turned out really good, the meat was tender and juicy. The kielbasa is great grilled and in combination with the onions and peppers it was just perfect.
I didn’t grow up eating seafood, the closest I got to eating seafood growing up was when I would make some tuna fish. I remember as a kid my father choked on a fish bone and I believe that was the end of seafood in my house.
My first try at real seafood was when my husband made me eat some fried calamari, and it was actually tasty. I didn’t know what I was eating and when he told me it was squid, I wanted to kill him. I then, started eating other types of seafood like lobster, but only grilled or deep fried, salmon, tilapia, crabcakes and shrimp. Now, we laugh when I say that I’m craving seafood.
I decided to make some Grilled Shrimp Kabobs for dinner and they turned out really good. I seasoned the shrimps with a dry rub about 2 hours before grilling.
For the last couple of weeks, I have been trying to eat a little healthier. Making small changes to what you eat are all worth it. I wanted to eat some meatballs, but I didn’t want to have the pasta and the carbohydrates.
I decided to make these meatballs with less breadcrumbs and bake them in the oven at a low temperature. These are the most tender Oven Baked Meatballs you will ever eat. They were so delicious, that I really didn’t miss the pasta, instead I made myself a small salad and that was just perfect.

2. This Sunday is Easter Sunday and most people will head to church in the morning and then go home to prepare some great dishes. What’s on your menu? I’m not doing much this weekend. I think we are grilling some ribs and corn on the cob, something simple.
